If you want to make a science experiment out of this and have it done even quicker than that ice, salt, water and stirring the water around with the bottle gets it down to temp in like 10 minutes.

You can also freeze grapes to use in place of ice cubes
If you wash pepples, dry them and then freeze them, it should be enough to filter the wine through the pebbles to get cold wine.
