INGREDIENTS
1 slab pork ribs, 7 to 9 pounds
1/2 cup Dijon mustard
1/4 cup brown sugar
1/2 teaspoon red pepper flakes
1 tablespoon Kosher salt
2 tablespoons BBQ Spices (smoked paprika, cumin, dry herbs/oregano)
After cooking; before browning:
2 tablespoons BBQ Spices (smoked paprika, cumin, dry herbs/oregano)
1/2 tablespoon cracked Black Pepper
DIRECTIONS
1. Place all ingredients into a small bowl. Mix them well with a fork.
2. Rub this mixture onto the ribs, on both sides.
3. Place the seasoned ribs into the pressure cooker pot and cook for 50 minutes.
4. Remove the ribs carefully from the pot as they will be very tender.
OVEN COOKED:
Transfer to a baking pan, sprinkle the rest of the spices, and bake at 450°F for 5 to 10 minutes or until golden brown.
GRILLED:
Brush some oil on the grill, add the rest of the spices and place the ribs when the coals are very hot. Allow for the ribs to brown and serve.
TIP: You can add the BBQ sauce before grilling or baking, or just serve it on the side.
