How To Cook Pork Curry – Pork Curry Recipe

Ingredients Required For Pork Curry – Serves 6 to 7
For Marinating the Pork:
1kg 36 gm boneless pork shoulder, cut into bite-sized pieces
2 heaped tablespoons plain unflavored yogurt
For the Dry Masala:
2 tbsp coriander seeds
1 tsp cumin seeds
1 tbsp black peppercorns
2 blades of mace (or ½ tsp ground mace or nutmeg)
5 black cardamoms (or add 4 more green cardamoms if unavailable)
5 green cardamoms
5 cloves
For the Curry:
4 tbsp oil (divided)
500 gm / 4 large onions, roughly sliced
1 bay leaf
1 two inch length cinnamon stick
Handful of coriander leaves
45 gm ginger
50 gm / 1 whole head of garlic
250 gm / 1 cup plain yogurt (set out 30 minutes before use)
2 tsp Kashmiri chilli powder
1–2 tsp sweet paprika
1 tsp turmeric powder
Salt to taste. I added 2 teaspoons
1 tsp sugar (optional)
1 tsp ghee (optional but recommended)
A few baby potatoes (optional)
3–4 cups hot water
Fresh green chilies
1 tsp lemon/lime juice to finish
More chopped coriander to garnish

I really appreciate you saying how much salt you use as it’s so disappointing to go to all that trouble of making a lovely dish only to find it tastes bland. I’m guessing you have had people saying that you add too much so may I make a suggestion? You could say something like, “How much salt you add depends on your taste but I would add this much” (that way we know what tastes best👍)
