How to Cook Ribs on a Gas Grill

  1. Thank you for this. Used this to grill my first racks of rib. Turned out great.

    I did have issues getting the grill to temp using one burner. So I ended up putting both outside burners on low and eureka. Consistent 225-250 down the middle. The surface thermometer is a must.

  2. I like this method, the ribs are tender but still have a bit of a chew. I don't like sauce, I do greek style, lemon, oregano, little rosemary, lots of garlic. 4 hours but it's unattended and easy. Less work than smoking, that takes 6 hours and don't like the super soft, soaked in sauce style.

  3. Here a challenge, how about using a Weber Genesis pre-2010 that has 3 horizontal burners? I’ve had this thing for 10yrs and have tried just the outside 2 or just the front one and it’s not good for indirect cooking.

    Fill Smoker pan with 4-5 oz soaked wood-chips – Hickory plus Cherry

    Place water pan next to smoker box

    surface thermometer on opposite side of grill.

    Pre-heat one side of grill for 15-20 minutes – 220 – 225 degrees

    Place 4 half racks pork bone side down on opposite side of burner 1 hr – 1:15 hrs

    Open – replace water and refill wood-chips

    Shuffle rib racks away from burner.

    cook another 1:15 to 1:30 hrs

    Turn rib racks so bone side up

    Check water pan.

    Cook for another 45 mins.

    Turn ribs bone side down and shuffle

    Cook for another 30 mins.

    Coat each side with bbq sauce.

    Turn on all grill burners to high.

    Set sauce caramelize for a few minutes on each side.

    Remove rest for 10 minutes.
