  1. I never salt my scallops. It draws moisture out of the scallop while cooking. I start with a small amount of olive oil, have the pan hot but not smoking. Cook scallop for 11/2-2 minutes. If you can lift the scallops with no resistance turn the scallops and cook for additional 11/2-2 minutes, depending on the thickness of the scallops. When done cooking you can add butter if you wish. I like a crust on my scallops. If you’re concerned about whether it is cooked enough. It is probably done enough if you cooked it on both sides sides.
