Ingredients
300g Fish fillets
30g Vermicelli
1 Garlic
1 Ginger
1 Green onion
1 Chili
2 tbsp Cooking wine
2 tbsp Steamed fish soya sauce
2g White pepper
Recipe:
1 Soak the vermicelli in water for 10 minutes to soften them.
2 Slice the green onion, dice the ginger, slice the chili pepper and chop the garlic into minced garlic
3 Cut the fish diagonally into thin slices with a knife.
4 Marinate the fish fillets: put 1 tablespoon of cooking wine, 1 tablespoon of steamed fish soy sauce, 2 g of white pepper and grated ginger into the fillets, mix well and marinate for 10 minutes.
5 Use scissors to cut the softened vermicelli short for easy eating. Then spread the vermicelli evenly on a plate;
6 Arrange the marinated fish fillets evenly on the vermicelli.
7 turn the gas on to medium heat, put 40 ml cooking oil in a pan, when the oil is hot, add the minced garlic, chillies and spring onions and stir-fry until they turn brown; add 1 tbsp cooking wine and 1 tbsp steamed fish soya sauce, then add 100 ml water
8 Pour the stir-fried minced garlic evenly into the plate with the fish fillets.
9 Put enough water in the steamer, put the fish fillets into the steamer, turn on the gas to high heat, when the water comes to a boil turn to medium heat and steam for 10-15 minutes.
10 Sprinkle some chopped green onion on the fish fillets as decoration and enjoy.

The steamed fish soy sauce v oyster sauce is confusing. Did you mean fish sauce and not oyster sauce? The video showed a much more viscous sauce more akin to fish sauce or soy sauce than oyster sauce.

I must mention that the gadget used for mincing the garlic is no good. After a while the string will burst and not easy to repair. It is better to get one that looks alike but runs on rechargeable batteries. I have used both both. The battery operated one last longer and easier to manage..
