My mother had us wash all green leafy vegetables to get the sand off the leaves, then cut, then wash again. She always stress washing them after cutting. She said they taste better. This was in the 1960s, she had no idea why. We did this to all green leafy vegetables except spinach. Her collard greens were never bitter like many I've tried, now I know why.

Step 1. Throw away Kale.
Step 2. Repeat as necessary.

the best way to prepare kale salad is to hold the leaf at the bottom and run two, gripped fingers up the stem to remove the leafy greens. once you've acquired enough kale, chop it up, rinse it, and lay it out on a cutting board and literally massage the kale with your hands (or gloves) and add a healthy pinch of salt, lemon juice, and a lil olive oil and massage massage massage for like at least 2 minutes or basically until the kale has become palatable.
Simple, throw it in the trash where it belongs.

Wow. People in the comment section really don’t like kale. Even his suggestion won’t convert them. I think Spinach is just as bad. Is there a solution for the bitterness in that?
If you're a good cook who enjoys playing with flavor, you'll know that there are lots of ways to make that bitterness work for you and will balance it with umami, spicyness, sweetness, or all of the above. And if you're a gardener or someone who cooks by season, you'll also know not to eat cold weather crops in summer, especially after they've bolted.
I'm pretty skeptial that this technique could do much to wash those compounds away in any case. Weird tip ATK.
I find no bitterness in kale; however, bitter melon is a different story but I still enjoy it.
