  1. The biggest problem with a BBQ is the lack of high searing heat. Most steak houses have grills or range tops Capable of very high temps, which gives the steak the sear needed to seal the juices inside. You can do this at home using a cast iron pan or flat grill on your stove top( gas preferred). Heat the pan until it's smoking…turn on your fan on high…I use olive or avacado oil to coat the meat before seasoning…the pan needs nothing then…. Use a meat thermometer always…125f gives you nice med to med rare.
