USE A SLOW COOKER AND SET IT TO LOW.

To help them not dry out, you could place the mashed potatoes in a bowl within the crockpot, then put water in the crock itself. A kind of bain-marie.

yeah im gonna put a huge fucking crock pot on the dinner table during thanksgiving
One more thing to wash. <sigh> You could just leave them in the big pot you mashed them in on the stove, at the lowest setting. I find if you put a lid on a pan/crock pot after the spuds are mashed, they get wet and goopy. Also, you could use a chafing dish that has a pryex dish inside.
