This summer, I've had some of the best peaches I've ever had in my life that were grown in South Carolina. If I can find them again I'm definitely making this.

What's the difference between tapioca starch and instant tapioca? Feels like grinding the instant tapioca seems unnecessary when tapioca starch is both easier to find and already ground.
