False. The closest thing to peruvian potatoes are purple potatoes. Peru naturally grows purple potatoes. My family has been growing them for centuries and most american grocery stores have at least a "medley" bag of potatoes that have purple in there

I made it and am eating some now. without the 8 ounces queso fresco or feta cheese, It is tasty. However, I am curious why use vegan recipes tags when it has queso fresco or feta cheese, cheese in it?

This is a nice-looking vegetable stew. To customize this recipe, I would add a variety of shellfish/seafood — calamari, prawns, langoustines, and crab, etc. — and skip the queso fresco.

The key to quinoa is cooking it with some sort of stock. With just plain water, it tastes like you're eating from a feedbag. And why are stews always "hearty?"

I never rinsed quinoa and never tasted anything bitter. I always get it from bulk bins.
Need a tip on cooking rainbow quinoa, the black ones don't cook as fast.

Cook with salt, then add salt to taste
I have eaten Quinoa many times, and I love to mix, Quinoa, Steel Cut Oatmeal, and Amaranth together, with fresh blueberries, blackberries, strawberries, and banana.
I also love to mix in Almonds, Pecans, Walnuts, a small amount of ground Flax seed, and then drizzle with some honey!
This makes a wonderful high protein, high fiber breakfast, or brunch meal, and is great for energy before going on a long hike!
You can also experiment with different grains like Kamut, Millet, Spelt, Barley, etc.
By the way, the featured recipe looks delicious, so I will have to try it, and may also add some other grains like Barley, and Amaranth!
like Kale, Cauliflower and now this. I lived 70 years without ever knowing about this and some how managed. We really don't need to know all this. Leave it in the country where it's popular. I heard this new trend is limiting the amount of Quinoa in other countries cause they are running on it like it's gold!!
