Panettone is an Italian Christmas bread. This version is quite simple and basic in comparison to the real deal. Although we are using a preferment, the proper one is made with sourdough and fermented for much longer. Nevertheless, this is a decent panettone. It is sweet, soft, and fragrant and quite simple to make. I will make a video on the proper one next Christmas so you can choose which one is best for you.

tried this and turned out good!
taste like your stollen recipe but this one is fluffier
I was looking at the recipe in the website, and it specifies 275g of flour for 105g of water. This means an hydration of about 38%! Is this right? Last time I tried to make a 50% hydration biga I couldn't mix properly and had to add another splash of water.
It's a little hard to get vanilla paste here. May I replace with vanilla essence (artificial)? If so, how much?
In Brazil, where I am from, it's very traditional to eat panettone in christmas season, but it's usually industrialized. Looking forward to make this at home this year!
Actually, we also have a variation called chocottone (I don't know if the other countries also have it), which replaces the fruits with chocolate drops. This is the one I am going to make!
hello, I am applying the recipe, but it tastes like cake and its texture is tight. where am i doing wrong?

Do you put the preferment in the fridge? In general…. do you put the preferment in the fridge? Thanks!
I love Panatonne ! Do you have a Poolish dough receipt?
Thanks!!
Thank you for sharing the recipe. My most favorite bread. They are available in the department store in the US around November. In my spare time will try to make it.
Thank you so much for sharing. This bread is my most favorite. I have to wait around November in order to buy them.
So no hanging upside down. :-))
Miss this breads ..
My smallest cake tin is 8 inches round. Do I need to adjust the recipe?
Charlie, I'm going to attempt your pannetone recipe. I usually knead bread doughs by hand, but I do have a good mixer, and this feels like an occasion to use it. Do you have any guidance on the speeds/times for kneading using a mixer and dough hook?
Good..Awesome…
Also enjoy and must watch this italian christmas ride https://www.youtube.com/watch?v=zdv639azVSw
Two thumbs up for this video, Charlie! I'm not sure I've ever eaten panettone. The ones in the store have never really tempted me. But yours looks lovely and soft, and moist. It's also very vibrant, and looks like it's full of Christmas cheer. I bet it smelled amazing!
Nice video, I like the cheat with the preferment instead of the sourdough. One thing for next time: before baking let a thin skin form on top, then slice it two times (like a cross) and place a piece of butter in the middle 🙂
