**the beef feet is always optional, I personally don’t eat it but that’s my moms favorite part of menudo so I 2 just for her

Ingredients:
5 lbs honeycomb tripe
Beef feet (optional)
3/4 cup freshly squeezed lime juice (about 4-5 limes)
5 1/2 qt water
1 onion
1 garlic head
4 bay leaves
1 Epazote stem
Salt I used 4 tbsp
1 tbsp oregano or menudo mix
32 oz dry white corn pozole
For the sauce
20 New Mexico or guajillo chile pods
4 chile anchos
1/4 onion
5 garlic
1 cup pozole(hominy)
1 tsp black pepper
1 serving of love 💕
