Wrong… to make mascarpone cream you need to add the eggs whit made snow, add that to your mascarpone cream and it is more fluffly and light

Too moist. Next time don't dump them all the way into coffee. Just a quick one face dip. And make your coffee stronger. Less egg yolks on the cream.
