  1. I made this for my wife and I tonight and it was very delicious. It probably won’t make the weekly rotation just because it’s time consuming to batter and bread the cauliflower. It was delicious and pretty fun to make though. I modified the cilantro sauce into a cashew cream based sauce because I don’t care for mayo or sour cream but that’s an easy detail to change. Thanks for the recipe.

    Also, these look delicious and I love that it doesn’t involve deep frying! I love cauliflower, but so often vegan recipes with it involve deep frying – and while I deeply (haha) love fried cauliflower it’s just a lot more work than I think is worth it most of the time. But roasting, that I can do!

  3. Elle is 1 of my top fave chefs on you tube, mango is my fave fruit & this recipe is perfect, I like soft puffy tacos, & ever since she did her video on the perfect baked potato I do mine that way now & I 'm Irish !

  4. Ive always liked cauliflower and especially roasted cauliflower but Im not a big fan of coconut. Ive added riced cauliflower to taco meat in the past with good results so I expect using a taco seasoning in the breading would work well or even use a crab boil/old bay type of seasoning

  5. I hate to say it, but cauliflower tacos don't sound good at all. As a native Southern Californian I can attest that the word "cauliflower" should never be used with the words "Baja" and "taco". Bad juju.

  6. I don't hate cauliflower, but I don't love it either. It's a really healthy vegetable and I'm always on the lookout for new ways to use it, this looks like a delicious option. If anyone else here has a favorite way to prepare cauliflower I'd be grateful to hear what you have to say.

  7. The cauliflower looks amazing coming out of the oven. I definitely have to steal a bite of one, lol.
    However, I would double check your tortillas. As this is a vegan meal and you did not specifically say that you were using vegan tortillas. Some companies still use lard.
