Around 23:02, as you put the lid on, you say you want to be sure the pasta stays below the liquid. But it is clear to see before the lid gets in the way that some pasta is not below the liquid.
A better way to not burn the cheese like in this video would be to put the Pizza only with the tomatp Sauce into the oven. Then when it starts to get brown, put it out of the oven and add the cheese. The Pizza is then finished when the Mozarella starts to bubble. Learnt this from Vito Iacopelli an italian pro pizzaiolo. Check out his channel to learn the true italian way of making pizza.

I followed your directions using 11ozs. of bread flour and 8 ounces of warm water. Your dough turned out much drier than mine. I could not pick it up in lump like you did. I had to almost pour it into the pan to chill.

VERY DISSAPOINTING! I saw this video and thought that would be great to make for the Super Bowl. I followed the recipe, EXACTLY, as well as all of the other instructions. It crust came out very soggy. It looked great, but that's about it. I scraped off all of the toppings and wound up eating a crust less pizza.
I worked for Pizza Hut over 40 years ago and we made the dough completely from scratch. I still have the original recipes, but it is hard to cut down to a single use since we started with 25 lbs of flour, yeast, salt, dry milk, oil, and we weighed the water!
The pizza dough did take forever but I think it was worth it. Five stars!!

Does the pan used in the ziti have an enamel lining? In my experience, cooking any acidic foods in regular cast iron strips the seasoning and imparts that seasoning flavor into the dish, which is wretched tasing.

Made this dish this evening. Followed pretty much exactly except I added about a half pound of cooked sweet Italian sausage broken into crumbles during the basil fold. I wish I could post the pic! Amazing flavor. Thank you!
Don’t forget to re-season your cast iron pot after all this tomato sauce boiling. Tomatoes are acidic and they eat the oil coating from cast iron skillets 🙁
