First I thought it was stir veg , in Kannada (Karnataka, India) we call Pallya. After you added rice the recipe similar to PULAO or PALAV
I'm from Spain , Cartagena ; and that's not exactly the vegetable paella , but looks pretty good . Over 10 ,i give you 7'5. It's just my opinion ,sorry and thanks.

This isn't a traditional combination, but it looks really good. Cauliflower is my favorite vegetable and that also helps.
Excellent recipe. I have retired to San Miguel de Allende, Mexico & always felt Spanish paella was a bit bland. I decided to make a Mexican paella by adding 2 sliced jalapeños & chili flakes. I also substituted zucchini & artichoke hearts for the beans. Fantastic result! Thank you! Jim

I live in the midwest, where most people eat meat constantly. I'm not like that anymore. I'm a near-60 year old woman.
I cannot wait to prepare this for myself, as well as two out of three of my adult kids. I am looking forward to showing off this gorgeous dish.

Do you lose anything in making this paella on the stove instead of over a wood fire?
Funny you actually "cupped" cauliflower. I mean the recipe will be ruined if there were a few more florets.

I tried this and got a pleasant result. Realistically, how much flavor can you hope to get from white rice, cauliflower and butter beans? These ladies are enthusiastic about a not–so-very-robust dish.

Is there any substitute for saffron?
I have recently become fascinated to find that almost every cuisine has a dish that breaks down to: beans and rice. Glad to have a Spanish or possibly American Spanish dish checking in on this.
You gotta just insist that people get scales for their kitchens, 2 cups of cauliflower is a nonsense measurement! It's like calling for 3 pinches of tomato paste
