So much better if you Add sauted diced onion, diced celery. mushrooms and some Poultry Seasoning.

I made this today and too delicious, ate too much! Very easy.
almost like my grandpas recipe, but that's way too much butter I would say half the stick and two rounds of Ritz just so you get that nice "stuffing" top with a little brown edges. Also the sour cream, that's a new one. Not knocking the recipe but its just a little different.
I added diced celery carrots onion and garlic ( sauté first then add water and boil with the chicken) strain out cooked veg with the chicken. Reserve to add to casserole . This makes your casserole a complete meal.
I make mine in the vein of tuna noodle casserole, but no tuna!

I think it would be a good idea to add a little of the pasta water to the soup mixture, as it looks too thick. Also, I would only use 1/2 a stick of butter to the cracker topping. Other than that, looks good!

My only complaint is that not all of us like canned food. We do not purchase canned stuff because it has funny flavor, and smells like hospital food. What can I use to replace the canned stuff? Anyone know? Some mushrooms and heavy cream and some chicken stock?
I don't really like sour cream. Can I use milk instead?

I live in India we don't get cream of mushroom nor cream of chicken
Don't add salt because the 2 cans have enough sodium to fill 2 days worth. Also cheddar cheese is very good instead of butter, at least the way I've made it.
