INGREDIENTS
7 ounces dried pasta, such as bucatini
4 ounces mushrooms (I use an equal mix of shimeji, eryngii, and oyster mushrooms, but most other combinations are good too)
2 tablespoons vegetable oil
1 teaspoon sherry vinegar, or white wine vinegar
2 teaspoons red miso paste
3 tablespoons butter, softened
5 garlic cloves
1/2 cup heavy cream
1 stalk of scallion, finely sliced
1 pinch salt
1 pinch black pepper

Don’t be afraid to add some rehydrated seaweed or some caviar if you have some laying around! I use the cheap caviar 👍🏾

Lately my favourite comfort meal has been rice pasta with miso paste added at the end & mixed in while it’s hot. It’s something I can easily make in 10 minutes & suits any mood & most energy levels.
Since mushrooms are my favourite food I’ve been wanting to add them. I found your video & followed it (minus the butter which I only have in the house for special occasions) & it really boosted the meal!
I didn’t know miso could become such a lovely creamy sauce! And it only added a little bit more effort with the mushrooms, so I think I’ve found my new comfort food-so thank you so much! 💕

What is miso
Can I add miso and butter separately to the pan or do I need to make miso butter and then add it? Does it make a difference? Asking cause I live in a cold city and prepping soft butter is a task
