So I hate to rain on everyone's parade and maybe it's because of where I live but where does one even buy yuca it's certainly not in any of my grocery stores which tells you where I live that there is a food shortage or a fresh food shortage I love cooking with ATK but I'm kind of angry that ATK always assumes that I am someone that makes more than the average income in the US and lives in a great place I don't but I want to cook well so help me be a part of your program but not feel excluded

Yucca Cuban style: boil them just like she did, in a separate pot get vegetable or corn oil hot then pour it over a container with sliced onion, garlic, salt and vinegar (and or lime). That is the absolute greatest and most classic condiment for boiled or even fried yucca.
Yuca contains naturally occurring cyanide that can cause paralysis and death. This should be addressed, as well as all the steps required to prepare it safely. This gross negligence is so disturbing.

You should mention that raw yucca is toxic and so that's why you need to boil it first

Thanks for this! I grow Cassava, but didn't really know how to use it in recipes. Fried looks delicious! Actually it makes a nice ornamental plant in the landscape. The slightest breeze causes the leaves to flutter. Also, visitors to my place frequently ask "What is that plant ?" Good conversation starter.

As a latin american woman I have to say that no salt is added to the yuca until it is soft. When it boils enough and softens, add the salt. If you add it before it does not soften enough later.
Boiled yucca (you-ka) with bacon, pork, chorizos, sausages, onions & lots of garlic is awesome! Always make extra to make fried next day!!
