What a great recipe and video. It worked beautifully. One tip (learned the wrong way) scoop the nuts onto the pan. I guess my egg ratio was a bit off and too much egg meant cluster of nuts sticking together.🤦
If I want to make savory and not sugary do I just use the savory seasoning and leave out the sugars? What do I replace all that sugar with?

I made these for friends. They were a big hit.
i wanted to see if i could roast chickpeas this way instead of nuts because they're so much less expensive. it worked out really well! the only difference was the cook time. they took almost two hours since they're more moist but i ended up with lovely, crunchy, delicious spiced chickpeas. love this method, will make it again in an even larger quantity!

Is the egg white mixture then whipped or mixed some? I see similar recipes whip the egg whites a bit to lighten them up some. Not to the merengue point tho.
the nuts were black on the bottom they were no good the video showed and said turn the pan halfway through. my wife said I should have flipped the nuts over not just turn the tray like the video showed. this is not a good video at all for people trying this recipe the first time its my first thumbs down ever it just made me mad

this is similar to my recipe. I whip the egg white first so it's fluffy and more volume. I also add some cooking oil so the nuts have a bigger roasted flavor. Then I drizzle some honey before mixing.
This looks dangerous. I’d eat the whole pound in 15 minutes. Yes, I mean dangerously delicious.
