How do these sticks freeze?
I watch a lot of your guys stuff and it’s very helpful. I do have to say I’ve never finished snack sticks in 4 hours on the smoker but I’m going to try the same temps you did I’ve got a 20lb batch going in the smoker tomorrow before work. Only issue is it’ll be single digits tomorrow
Why didn't you use the grinder to do the stuffing too?

Is there a need to let the sticks sit in the fridge overnight with the cure in it? Or can you stuff the casings and then go straight to the smoker?

Horrible customer service with these grinders. Had a simple plastic part go bad and I’ve tried and tried to get them to answer for a warranty, nobody has responded after numerous calls, messages left and callback number left in the queue. Meat your maker is horrible
