I'll try toasting the garlic like this! We've been having spaghetti & meatballs every Sunday, but my boyfriend is vegan so I use Impossible meat. So good! I make the bread, too. Now to make garlic bread!

I also hate it when pieces of cheese break off when I'm preparing food. I think the problem is the part where I jam a knife into the end and give it a twist and these pieces break off, like almost an ounce. But I'm told that's how you temper the wedge before grating. It's science or something. And of course I have to consume the broken pieces immediately. (Well, I spread it throughout the cooking process. A piece here, a piece there.) If I don't, they'll get all rubbery in the fridge.

I'm not sure there is such a thing as bad garlic bread, as long as the garlic being used as fresh, and not garlic powder or garlic salt. This version makes me a little uneasy, because I'm afraid I would end up burning the garlic I typically make the spread for my garlic bread using roasted garlic just because it is more predictable and easier to work with, for me. I'm going to have to give this person a try. A few years ago, Bon Appetit magazine came up with a version where whole cloves of garlic our sort of poached in melted butter over low heat until the karlik is softened and the butter is richly flavored that was one of the best versions I ever made. Now I want garlic bread.
