I feel like sour orange is a key ingredient that should be mentioned whenever you use orange and lime. After all, they are grown in Florida and are fairly accessible in most southern major metropolitan areas.

You have made a wonderful Mexican adobo. I am also familiar with he Filipino dish of the same name but very different flavors (garlic, vinegar, and a little soy sauce). I assume they both have their roots in a Spanish dish of the same name. What is in a Spanish adobo? Thanks.
Adobo can be mixed with yellow ginger. And it is called "Adobong Quezon". There are many recipes of adobo you can either use meat or some choice vegetables. Like string beans and water cabbage (kangkong)
could I use chuck instead?
