It's called a galette. Depending on type of fruit filling (all berries or very ripened fruit), may need to add a teaspoon of cornstarch to prevent a soggy bottom.

For the "fraisage" dough technique, after smearing the dough out the first time, consider folding it back onto itself (instead of re-bunching it) before smearing it again, to create more "layers" for flakiness
the oXo digital scale you guys tout as the best one has the ability to measure in grams why not just share the measurements in grams

You should use turbinado sugar for this recipe. You expect me to use normal white sugar like a peasant!?
