Ribeye roast
Not sure I would do this with an eye roast. It's not a stewing beef and it's not cheap. A bottom round rump, a chuck roast or even a London Broil would be better suited. I wouldn't want it stringy either and that's what happens if you cook it too long. Other than that it's a great recipe. :o)
