Love the idea of cooking the beans just a touch under and then cooling them on a sheet pan instead of in a water bath. Living in a major drought area, saving water is key and little tips and tricks like this add up!

Gonna make this with Tilapia! Also I don't have a stove so I did this in my toaster oven!! Just watch it!!! Patience is key when it comes to cooking. Turned out amazing!!!

For those of us who don’t like cilantro, fresh mint also works extremely well with this. I’m one of those people that cilantro tastes like soap or earth to.
