I get the impression that the jerk marinate was too spicy, based on Julia's reaction to the smell of the blended marinate and their taking only one bite of the chicken. The chicken looked delicious. Wouldn't want my mouth on fire to distract from the overall flavor of the chicken, so personally I would use only 1/2 of a habanero. Nothing worse than food that is over spiced.
For an authentic jerk chicken, doesn’t the marinade usually include some kind of acidic ingredient like lime juice rather than squeezing of lime after cooking?
grew up in the restaurant industry … ( 35 years ). my first teacher was my own, “father” … not a really good teacher, ( period ). so i took it upon myself to teach myself how to cook properly … by watch programs with ms. Julia Child and mr. Actually ladies,Jerk Chicken seasoning was invented by the Arawak/Taino Indians 2500 years ago. Not to discredit the Maroons, but they only adapted the jerking seasoning chicken technique down the line being taught. Jerk Seasoning didn't come from or invented by African Slaves even though some blogs says it was conceived by theM.. All this info is on the web ladies.

rather than moving all the chicken to the other side of the grill,,,why not just spin the grill half way around

I always love the history behind these dishes. After watching this episode, it has made me research more about the Maroon people and their history.
Yikes… that seasoning is too light in color, too runny and missing clove & fresh ginger. I mean I bet it tastes good but you need those extra flavors. And if you can find scotch bonnet peppers use them in place of habanero. 👌🏽
Oh snap I always to say “Juk” meaning to poke but didn’t know it was related to Jerk. I’m Barbadian 🇧🇧-American and sometimes would speak some Bajan Creole (broken english) words. I aslo met a Panamanian 🇵🇦 that would say Juk too and that’s when we realised it wasn’t unique to our own countries.
