The enchilada concept of Americans is taco bell, That recipe is trash, in Mexico the ingredients are natural. No processed . I never seen that enchiladas in Mexico.

Made this last night and had everything except the green onions for the top, so I used a few spoons of Pico de Gallo with the sour cream. They were fantastic! They will go into the dinner rotation.
If you're short on time, a good alternative to oiling and baking the tortillas is to wrap them in a moistened paper towel and microwave them for about 60 seconds.

Onions. Yellow onions? White onions? Sweet onions? Softball sized onions? Baseball sized onions? Recipes that just call for an onion are kinda useless. Why give amounts of other ingredients but just flake on the others. You are better than this.

### Americas test kitchen ground beef enchiladas
$$ Ingredients $$
– 1.5 oz dried ancho chile
– 2 cups beef broth
– 2 chopped onions
– 6 cloves garlic
– 1/4 cup tomato paste
– cumin
– 1 tbsp minced chipotle and adobo
– 1lb 90% ground beef
– ground coriander
– cilantro
– 1.5 cups monterey jack cheese
– tortillas (12-6 in tortillas)
$$ Steps $$
1) Remove seeds and stem from ancho, tear into 1 in pieces and toast in dry pan, a couple minutes
2) Add beef broth to bowl with chiles and microwave on high 2mins, let stand for 5mins
3) Cook onions ~ 5mins until translucent
4) add garlic, cook ~ lmin until fragrant
5) set aside half of onion mixture
6) Add tomato paste and 1 tsp cumin to other half of onion mixture still in pan, cook ~ 5mins until tomato browns,
remove from heat.
7) Add broth and chiles to blender, add chiptole and adobo. add tomato/onion mixture.
8) Blend ~1 min until sauce is smooth
9) over medium heat, add ground beef, 1/2 tsp table salt, 1tsp cumin, 1tsp ground coriander, cook ~2 mins
10) add reserved onion mixture and continue to cook ~4-6mins until fully browned, remove from heat
11) to meat, add 1/4 cup chile sauce, 1.5 cups cheese, 2tbsp chopped cilantro, and stir
12) brush each side of tortillas with veggie oil, place on baking sheet and bake in 400 degree oven ~ 5mins to soften
13) add 1/2 cup of chile sauce to bottom of 9×13 in baking dish
14) roll enchiladas, 1/4 cup of filling in each, add to dish
15) top enchiladas with rest of sauce and add some more cheese
16) bake in 400 degree oven for 15 minutes on middle rack until sauce bubbles and cheese browns
17) let cool ~ 10mins

I use to work at a Mexican restaurant that made the best enchiladas. This recipe is very close. Gotta cook this and try it.

I think I would back off from using oil to soften and use the sauce to soften and add more flavor
to the corn torties– Just my way of doing things.

Wtf is coo-min? Cumin is pronounced queue-min. There is no 'o' present in the word, nor an 'oo' sound.
That’s what Walmart does, they put carbon monoxide in their ground meat packages to keep it looking “fresh” longer. I won’t buy any of my meat at Walmart anymore-best to get that at your local grocer who has a butcher or at a butcher shop. The little bit of savings you might get from buying meat at Walmart just isn’t worth it to me.
OK, my father, both of his parents, and my mother's
mother were born in Mexico. They taught me to fry
the tortillas in some fat, to soften them up. Also, we
just stacked the tortillas up, pancake (or Sonora) style.
Fry the tortilla, for just a few seconds to soften them,
into the Enchilada Sauce, again for a second. Now,
on the plate. Add what fillings you want. Cheese,
lettuce, onions, some seasoned ground beef (or
some ground pork.) Put another tortilla on, after
it has gone through the same procedure. Repeat,
as much as you want. Last step, put a sunny side
up egg on top.
Garnish with a LOT of Pico De Gallo, and lime juice.
Lawyer slices (Avocado) as needed. (You Spanish
speakers may appreciate the "lawyer" mention.)

Very best enchiladas with out the braised long time of whole beef. I’m making a triple batch for my 5 athletic boys! They will be so hungry after their various sport actives! Baseball. Rowing/crew, basketball, football and dance!
The average Mexican/Hispanic family eats ground beef far more frequently that shredded beef. Shredded beef is like tamales – saved for special occasions. I've never had enchiladas with tomatoes in the sauce. We call those emtomatadas 🙂
