Recipe: 1½ cups frozen strawberries
½ cup almond milk unsweetened
2 tbsp pumpkin seeds raw
1/8 block soft tofu, about 1.75oz
¼ medium avocado
2 Medjool dates pitted
½ tsp vanilla extract
2 tsp maple syrup
1 pinch sea salt

For the glass:
coconut cream
strawberry jam

Directions:
Combine all of the ingredients in a blender and blend for 30-40 seconds or until very smooth and creamy.

For best results, decorate the glass like they do at Erewhon! It’s not just pretty, it actually tastes really good too.

Simply spread some coconut cream around the inside of a tall glass using the back of a spoon. Then do the same thing with some strawberry jam.

Then pour the smoothie into the glass and enjoy!
