Don’t cover it when baking. Cooking uncovered yields a wonderful caramelized and concentrated tomato sauce…and you don’t waste any aluminum foil.

This meatloaf is as easy to make as it is delicious, I made no changes to recipe. I did take my time and removed all grease rendered from the meat into the sauce. Enjoy!
This meatloaf is go good. My husband smoked it a little before cooking it all the way. Such a great recipe. Our favorite so far. Thank you for this.
If you have left over sauce and meat for sandwiches, you can cook the sauce down and make tomato jam with it to spread on the bread. 😋😋😋
Made this a couple days ago. As a meatloaf "junkie", I have to say this gets better with a little age in the fridge, but I love cold meatloaf sandwiches. My wife said, and I'd agree, it's a bit too salty tasting and that has to be from, duh, using saltines 🙂 You may want to try this recipe with low salt or no salt saltines and yes, that makes me laugh thinking about it… no salt saltines. Definitely try this recipe!!
