I think they are trying to use things that most home cooks have in their kitchen. That's why they didn't use the jamaican dutch oven. If you're health conscious, just adjust to what you know is better. I will be doing this, but using avocado oil and my carbon steel pan.

This recipe looks good but I wish you wouldn't use non-stick pans and then advise viewers to cook food "ripping hot" in them. This recipe would have been better suited to a stainless or carbon steel pan, which would also have created fond for the rum to deglaze.
