The nori wraps are actually algae that is grown on sheets and pressed together. I know seaweed is actually algae too, but nori are different.

Hi ATK, it’s difficult to get Sake or Shao Xing cooking wine now. I managed to get hold of Nakano Rice Vinegar (Natural) and Mizkan Mirin and Kikkoman Less Sodium Soy Sauce. Will that be ok? Or do I need to make adjustments on the ingredients and/or measurements? Thanks in advance.

Bridget, I do not understand the need to add salt to a mixture with several tablespoons of soy sauce. Can't you just fine tune the amount of soy, or is there something else going on that I'm missing?
