I've made this a few times now, and my wife and I love it. The only difference when I make it is that I use a 1 1/2-2 lb. skinless chicken breast rather than the thighs. There's little or no fat to cut off, which saves time, and I can easily slice it into strips or nuggets, depending on what we want to eat. Thanks, Bridget, for doing this!
I put my garlic in the freezer will never ever do that again. Killed the flavor of the garlic.
ps Mom also used sesame oil and fried it up twice.
Potato starch is katakuriko. In today's congestion at the port of LB/LA, yes it may be in short supply but it can be found. Much better than corn starch. Also, my mom used the back of her knife to easily scrape the skin off the ginger then used a traditional grating tray which captured the ginger juices.

I made this a couple days ago. The result was fantastic. Crispy and full of flavor I was skeptical about the lemon but I was wrong perfectly

would be better without the saki it adds no taste to the chicken alcohol is not needed to make the chicken taste good and saki is not used by the japanese in the original recipe

She's right, this needs absolutely no condiment because the chicken is so incredibly well flavored. Brava!
Great recipe, karaage chicken is a favourite. But can I give a bit of advice. Do not use vegetable oil. Or canola oil. Or rice oil. Or any seed or grain based oil. That's really the most unhealthy ingredient in this recipe. Super high in omega 6, which is what gives you visceral fat, the fat that accumulates around your stomach and organs. The fat that causes heart attacks. The fat that kills you. Ever wonder why we all know fast food is bad for you? They all use grain and seed oils. Instead use olive oil (a good seed oil), coconut oil. Or just some lard or ghee like our grandparents used. People weren't nearly as obese in the old days. I suggest if you are doubtful, feel free to do your own investigation. I did, when I wanted to lose weight. Lost 40kg in 8 months. Never looked back. Drop those toxic oils and cut the carbs. Your body will thank you. And the karaage chicken will probably taste even better in ghee…oh, and don't forget the Mayo based dipping sauce, look it up…

I tried to learn to make Karaage myself but had several failed attempts before I figured out the importance of letting the coating hydrate.
Past me would have really needed to watch this video, but hopefully it can save someone else from failed Karaage!
