I was looking for a different way to make meatloaf because I don't have a traditional meatloaf pan. These were soooo much easier and they tasted great!

I've done mini BBQ meatloaves similar to this, but cooked in the microwave in a little round glass dish. They were crazy good. Never used cheese in a meatloaf, but am intrigued. Gotta try..
I make a huge batch of these and stick them in the freezer. Dinner is so easy when you pull out how many of the mini meatloaves you need and bake them for an hour. It works with other meal loaf recipes too.
