You cook these chicken thighs in 425° oven for 30 minutes then turn and cook additional 20 minutes? Seems like a long time.

I do mine on a rack as to lose some of the fat, with honey instead of sugar in the sauce

Honey is always a fine substitute for sugar, Glenn Robinson. Just remember that it's sweeter than granulated sugar so you won't need to use as much: 3/4 cup honey equals 1 cup of sugar.
