Most underrated channel
I normally like ATK reviews and recipes but this i have to say is completely wrong
1 Cut the tortellini into 3 cm squares
2 Add a small amount of filling
3 Orient the square as a diamond on the palm of your hand
4 Fold and seal from the southern point to the northern point
5 Roll the side of the pasta lightly
6 Bring the two southern points and fold them around your finger (Index or pinky) making a hole or channel.

Tortelings are a bit large for Bologna
FIRSTLY, throwing away the scraps??!! What's the MATTER with you??!! You can cut it into small strips & boil that with Fettuccine noodles, just like you would with fresh made noodles. Who taught YOU how to cook ??!! They obviously also taught you HOW WASTE FOOD. You must be incredibly WEALTHY to throw away perfectly good food, like that.

These are NOT tortellini. You made some stuffed pasta with loads of filling and inappropriate to retain broth. Tortellini are substantially different in shape.
I can't believe you didn't tell us that the tortellini, when perfect, must resemble the belly buttons of the women of Florence. That's how I was taught.
I miss federal Hill in Providence, R.I. Fresh pasta shops make doing your own Tortellini pointless.

Do not discard the scrapes of the pasta. Cook them up but try to cut them in like sized pieces.

Those look perfect! I'll be honest usually I don't have the patience for this. I've been 'straining' my brain trying to think of a faster way to do it. Maybe one day!
