For the crust, you also can use potatoes cut relatively thick, like 1/3 inch or so the result is phenomenal

We dont add cumin .. seldom you see cumin in rice .. we add saffron .. persian authentic rice, for tahdig we add one egg yolk to yogurt plus brewed saffron and butter
Khareji Make rice our way and mess it up the most.
As a Persian, I would not recommend this recipe.
I have made this 3x and it's perfect every time. SOOOO delicious.

I was following a recipe that gave instructions how to create this. It would have turned out perfect if I remembered to turn the burner off. With the rest of the flavors in the dish, the burnt rice wasn’t noticeable at least. Tahdiq fail.
