I tried this it is actually really good. By manager brought some over to work except it had walnuts and no peaches. Instead of marshmallows it was cottage cheese.

My family makes the same salad every holiday but we don't add all the fruit we just use the pistachio pudding, crushed pineapple, cool whip and marshmallows and we call it pistachio fluff salad. My grandma used to make it all the time with mandarin oranges but my sister makes it now and she leaves them out.

Similar to the Ambrosia Salad
This can be made with sugar-free pudding and low calorie topping without affecting the flavor. It's just as good. Vanilla, French vanilla or white chocolate instant puddings can be substituted for the pistachio with equally great results.
