  1. Hi there, if you washed and patted the raspberries to dry them as you said you didn’t want to add any water, how would that work if you wanted to use frozen fruit as you suggested as an alternative to fresh ones. Would you have to thaw them first ? Thank you.

  2. You mentioned in the video that these could be made a day ahead. At what point would you set these aside in the fridge for later baking? After filling the individual ramekins but before topping with crushed pistachios?
