Well, you almost got it right. I have lived in New Mexico for almost 55 years and I would not touch that mess. Here we tear off a corner and put the honey INSIDE. And to the person who says they contain pumpkin – not here,they don't.
Pro tip here: splash the oil on to the dough as it fries. This will make the sopapilla balloon up with air.
This recipe IS NOT sopaipillas, the original version has pumpkin !!!!, this is nothing like the original.
