In this video i’m going to show you how to make roast pork with PERFECT crackling!
I’ll be sharing my tips to ensure you get that perfect pork crackling, cooking times, temperatures, how to make easy crispy potatoes and much more!
This roast pork was around 1.5kg pork loin roast and I started the preparation by patting the skin dry with paper towel, then piercing the skin all over, then I covered the meat only in cling wrap whilst leaving the skin exposed. The roast pork then went into the fridge for 2 days (I always recommend 2-4 days) to dry the skin out.
After 2 days, I got the roast out, removed the cling wrap, seasoned the meat and then coated the skin in olive oil and a generous sprinkle of salt.
It then went into a BBQ which was running at 450-500F/230-260c for a bit over an hour until it reached 145F/63c internally, it was then rested and served!
Then for the potatoes, they were microwaved as per the packet instructions until soft, smashed down, coated in olive oil and then seasoned.
They then went into the BBQ for around 45 minutes flipping half way through the cook until they were crispy.
