Zatar literally means Thyme. It’s mostly thyme with different propriety additions. Sumac is a common one, but Sumac is much more Sumac is more of a table top seasoning like salt and pepper. I’m going to try this with sumac instead- maybe also add some fresh thyme leaves too
Anyone notice the guitar spatula?? Love it
What knife is that?
What did she make with the squash??
Love Za'atar seasoning. A staple in my spice collection. I have people eat my roasted veggies, including carrots, that ask for some Za'atar to take home. There are many spice combinations called Za'atar but all have sumac, thyme, oregano, and cumin.
I have to try the roasted butternut squash and customize the additions. A winner recipe for butternut squash to add to my collection.
It looks delicious 😋
Fantastic recipe and very fun to watch you cook!
I was introduced to Za'atar a few years ago and really enjoy it but didn't know what else to do with it (other than flatbread & olive oil). Thank you for sharing this creative and very healthy dish.
Watch Julia at 2x speed (click) when she wails on that squash and the carver !!!
Hey Julia, looks good. You could put your empty baking sheet in the oven on self clean and it will come out like sparkling new! Try it.
what is the other food on the platter?
Must be tasty! Thanks for the recipe, I will definitely make it.
What's on the platter beside the squash, please?
Looks sooo good, wish ATK would occasionally focus on tasty like this but calorie restrictive item for those of us who must stay on a 15-20 k diet
Thank you for this great recipe ! I love your presentation as well !
I like my vegetable knife better for this… it has a raised line on it that prevents the vegetables from sticking to the knife.
That’s a very cute little wooden guitar.

Looks delicious! @Julia what was the chef knife you were using? It's different than the one in the link
Buying butternut shrink wrapt is ecologically stupid and really not so much faster. I am still waiting for America's Test Kitchen to finally start thinking more about ecological solutions..
Does anyone know what's the protein on the other half of the platter?
