Should i kneed on a 1 or 2 setting of mixer?
I cut my teeth on baking sourdough breads and this is such an enjoyable, quick recipe. You can start it in the evening and have the bread out of the oven before bed time!

You say to use 4 1/4 cups on the blog post and made me waste the last of my flour. Clearly what you used is not even close to 4.25 cups. My dough ended up like cement in the stand mixer.

Thanks! this is really encouraging. It's so easy to buy sandwich rolls, and they're always…. Tasty, but not satisfying. they're "good" in the industrial meaning of "good" but only if you go for a reply high-class bakery and spend both much time and money – you won't get those REAL GOOD rolls.
Now this looks quite easy, not messy, not hard work, doesn't even take much time to do. I will surely make them soon.

John – I know mostly this is geared toward folks who cook or bake a lot but what about the people who do not own food processors? Can you please make this not using any "fancy gizmos" (by which I mean anything beyond a mixer, bowl and utensils) or make a comment like (if you do not have X, I recommend you get X but you can still make this by doing this instead).

My dough sticks to my fingers/hand. I've tried oiling my hands and flour my hands. It's very difficult to shape the bread. Any tips?

My 1st attempt failed because I did not know what 19 ounces of flour included as I missed the note that 19 ounces equals about 4 and a half cups of all purpose flour. Who measures flour in ounces anyway? Hopefully I will do better next time.
The ones on the left of the finished rolls looked just a little better than the ones on the right.

Makes 6 Sandwich Rolls:
1 package dry active yeast (2 1/4 tsp)
1 1/2 cups warm water (100 F.)
1 1/2 tsp fine salt
19 ounces (by weight) bread flour (about 4 1/4 cup
Mine turned out very bland tasting 🙁
kneaded by hand.Only took 15 min to bake.Any longer and they become dark brown,very hard and way overcooked.

When you roll dough up like he did here you should always roll towards you so you can tighten the skin with your thumbs or fingertips.
