5 sauce state, not 4
No way the smoke penetrates that skin, that’s a chopped ham sandwich. Looks good but I was looking for a holiday ham. I always remove the skin before I smoke a ham. I might try that sauce.

We called that chopped pork "hash" in Columbia, SC. Good over rice(which is daily staple) or on a bun with some coleslaw. Dang, I think I'll head over to Hudson's for some bbq.

@3:50 Brian mentions the four BBQ sauces of South Carolina. If you do not know, they are
1 – mustard sauce
2 – vinegar, red pepper flakes
3 – vinegar, red pepper, very light ketchup or tomato sauce (thin)
4 – vinegar, heavy ketchup, sugar, heat (thicker like Kansas City)
SC does not represent BBQ sauce, only Eastern NC is the best. SC is gross.
