I bought a beautiful lil chicken today. Winner, winner…Sunday Smothered chicken dinner! My mom made something like this. But I don’t think she browned the chicken enough first. She called it ‘chicken stew’. growing up, my family only ever had rice with chicken. from NJ, not the south
Made this today (9-2-2020) so good even my finicky kid liked it. Recommend this recipe.
Dan did a video in 2014 about Making a Better Pan Sauce, where he proved that starting with wet, cold chicken skin-side down in a cold pan with half the oil, all on lower heat setting, produced more fond. More fond is more flavor.

I like this recipe, I love chicken all though I have never had chicken cooked under an hour that was done and most importantly, tender.
Everyone just handle your freaking chicken the way you want! That being said, its always nice to see a chicken quartered again as a reminder of how its done, easily.

I love this show, especially Bridget, Julia, Dan. I do have one quibble though. Julia used chicken broth in this recipe (which is pretty high in salt), then she added yet more salt. I saw her do the same thing in another recipe that called for capers. She rinsed them because they were briny, then popped in more salt! Lidia does this too. What’s up with all the salt??
