  1. I bought a beautiful lil chicken today. Winner, winner…Sunday Smothered chicken dinner! My mom made something like this. But I don’t think she browned the chicken enough first. She called it ‘chicken stew’. growing up, my family only ever had rice with chicken. from NJ, not the south

  2. Dan did a video in 2014 about Making a Better Pan Sauce, where he proved that starting with wet, cold chicken skin-side down in a cold pan with half the oil, all on lower heat setting, produced more fond. More fond is more flavor.

  4. I love this show, especially Bridget, Julia, Dan. I do have one quibble though. Julia used chicken broth in this recipe (which is pretty high in salt), then she added yet more salt. I saw her do the same thing in another recipe that called for capers. She rinsed them because they were briny, then popped in more salt! Lidia does this too. What’s up with all the salt??
