I would add in TWICE AS MUCH ARTICHOKE AND 3 TIMES AS MUCH SPINACH! Just make sure to mince the artichoke well so it's well-incorporated !

What if I use the entire artichoke leaf and blend them into tiny bits

I am glad I found this recipie. There is a certain red headed Oklahoma girl on that "other" network that showed her recipe this weekend and it started with a roux. Not very good if you have friends or family with a gluten allergy.

I prefer your recipe from the December/January 2008 issue of Cook's Country. It is much lighter and more flavorful. I found this one to be kind of greasy and heavy.
I'll try this soon. I recently had this at Applebees for the first time, and it lacked the "zing" of artichokes. It was pretty bland.

You know, I've never understood why people include artichokes in this dip. They are for all intents and purposes, bland fiber added to the dish. Save your money and make it cheesey spinach dip.
