While it looks delicious, I was expecting something more healthy from America's Test Kitchen. Too many Americans are overweight and need food guidance that is more nutritious. I will tone this recipe down, but I really don't want to start looking like the two female cooks at the end of the video. Let's not make this a Paula Deen comfort food channel please. Crazy thought! Let the presenter pick intro music to how they feel about the dish. This video was steakhouse and the intro music felt like farmhouse. I like both kinds of food but the music didn't match the steak house vibe.

I add mushrooms when cooking the base but instead of shallots, I use onions or leeks. I also add cream cheese and cut back on the cream, no roux. Fresh ground nutmeg is de rigeur. Even frozen spinach is wonderful this way.

It's the nutmeg that makes the recipe. I first learned about the combination in The Flavor Bible by Page and Dornenburg, which I would highly recommend to anyone as a great reference.

A confirmed cooked spinach hater, my childhood memories of frozen spinach that came in cardboard boxes from the freezer wasn't great. Metallic, bitter and pungent with the foul-festering odor of decaying seaweed, I wasn't a fan of cooked spinach until a revelation, eating creamed spinach with my parents, from a restaurant casino in Sparks Nevada, sometime in the early 1960s (casinos in the 1960s used good food to draw gamblers. My dad, a fellow hater of cooked spinach even tried second helpings; and after our first taste, we came back again and again to that restaurant. I will try your recipe, but with one difference, I would finely pulse up the fresh spinach, maybe in a food processor, with the onions before cooking, to make the spinach truly creamy. That's how I remembered it, a pleasant dinner with my parents so long ago.
Mmm.. I make this all the time, there used to be a restaurant named after a country singer Kenny Rodgers and I remember my mom asking for the creamed spinach recipe.. the kitchen staff never told her the recipe but she recreated it to a T.. it’s definitely the nutmeg that makes it spectacular.
