How to Make Summer Berry Fools | Julia at Home



For a berry fool with intense fruitiness and rich body, we used gelatin to thicken our fruit and combined whipped cream with sour cream for just the right touch of richness with a tangy undertone.

Items for the sous chef to wash: 1/4 size baking sheet, paring knife, food processor bowl, food processor blade, food processor lid, two fine mesh strainers, 4-cup liquid measuring cup, three rubber spatulas, 1/2 cup measuring cup, small bowl, mini bowl, whisk, small saucepan, four medium bowls, chef knife, cutting board, tablespoon, standing mixer bowl, standing mixer whisk, 1/4 cup measuring cup, 1/2 teaspoon, 1/3 cup measuring cup, 2 spoons, 6 parfait glasses, 6 serving spoons.

  2. These were yummy and pretty! I halved the recipe but found that I still needed to use the 2 tesp of gelatin powder instead of 1 tesp. The puree/gelatin mix sat in the fridge overnight with no problem. I used only strawberries and skipped the sieving. I couldn't find Carr's whole wheat crackers so I used Lotus Biscoff instead. I'm sure Walker's shortbread would work as well. Thanks for the recipe!

  3. Who ever thought that it was a cute name…..IT'S NOT! "Fools" is such a tacky name for a dessert! (instead of heating up cream with egg, they whipped cream with gelatin) So why don't they just call it a "Gelatin Berry Parfait" ¯_(ツ)_/¯

  4. Take it to the next level and make it a ‘Eton Mess’ by breaking up meringues into the layers! We also sometimes add chopped marshmallow or make it with yoghurt instead of cream and top with grated chocolate! Yum

  5. If you use the plastic blade that came with your food processor (you know, the one you never use) it will smoosh up the berries without grinding the seeds. That makes it much easier to strain them out and there won't be any fine particles slipping through the seive.

  6. To all the haters who say “just eat the berries with some cream” you appear to be missing the entire point of preparing food. There is so much more to the enjoyment of food beyond the simple consumption of the individual ingredients. Beautiful presentation alone can increase the enjoyment of a dish, add to that the enjoyment from having food prepared in new or interesting ways, and the new flavors and textures that arise when we mix different ingredients together.
    No one is suggesting that this is the only or the proper way to enjoy berries and whipped cream! Rather, this is showing a way to transform an already delicious set of ingredients into a truly memorable dish.
