For a berry fool with intense fruitiness and rich body, we used gelatin to thicken our fruit and combined whipped cream with sour cream for just the right touch of richness with a tangy undertone.

That looks so delicious 😋 a lot of steps but worth it 😊
Made these last night. So good. Not too sweet so you can taste all of the berry flavor and not just sugar like so many other fool recipes.
So pretty!!! Yummy!
Carr's whole wheat crackers are yummy, but there not so very unique. They taste a lot like Digestive Biscuits.
You don't have to do this, nobody's going to eat the mint…. this Marine thinking hmm 🤔 mint whipped cream sounds good!
Items for the sous chef to wash: 1/4 size baking sheet, paring knife, food processor bowl, food processor blade, food processor lid, two fine mesh strainers, 4-cup liquid measuring cup, three rubber spatulas, 1/2 cup measuring cup, small bowl, mini bowl, whisk, small saucepan, four medium bowls, chef knife, cutting board, tablespoon, standing mixer bowl, standing mixer whisk, 1/4 cup measuring cup, 1/2 teaspoon, 1/3 cup measuring cup, 2 spoons, 6 parfait glasses, 6 serving spoons.
Beautiful ❤
Good to have them taken-care-of.😊
Julia, I go with the big spoonful too. And I eat the sprig of Mint as well. YUM! ❤
lovely segment, recipe will be amazing! Anyone else think it was hilarious to see her eat it with a giant spoon?!?
The bowl count on making this dessert is astonishing.
Frozen berries for purée to save money since sugar is added anyway? Lemon zest garnish with mint leaves?
Whenever I strain something like this I use a ladle to evenly push the food through the mesh by using a gentle stirring motion.
I could easily eat all the 6 parfait glasses in 10 minutes!!!
Don't throw away the seeds with the remaining strawberries! Eat it!
These were yummy and pretty! I halved the recipe but found that I still needed to use the 2 tesp of gelatin powder instead of 1 tesp. The puree/gelatin mix sat in the fridge overnight with no problem. I used only strawberries and skipped the sieving. I couldn't find Carr's whole wheat crackers so I used Lotus Biscoff instead. I'm sure Walker's shortbread would work as well. Thanks for the recipe!
"You really can make a fool with any fruit you want."
ME: "I can make a fool without any fruit. All I have to do is open my mouth."
I’m going to try this… I might even use my berries (blackberries and raspberries) I grow….😋😋
Looks delicious. Can you substitute Truvia for the sugar? My son would love this but he’s type 2 so I’m looking to reduce as much of the added sugar as possible. Thanks. Love all your videos!
What can you use insted of raspberries? I have an allergy to them.
What is the gadget you have for storing and cutting cling wrap?? I never have much luck with the box it comes in
6 oz and a pound. Most people don’t know that. Measure in cups please.
Anyone else curious the tool the plastic wrap was in that made the cut so quick/flawless! Inquiring minds must know!
Who ever thought that it was a cute name…..IT'S NOT! "Fools" is such a tacky name for a dessert! (instead of heating up cream with egg, they whipped cream with gelatin) So why don't they just call it a "Gelatin Berry Parfait" ¯_(ツ)_/¯
Why are you so racist against mint?
I always eat the mint garnish
I'd be a fool to turn down that luscious dessert.
You ask for peoples cc just to see the recipe?? yikes!
What a beautiful desert.
Looks fabulous!
Who else is definitely eating the mint garnish? #teammintgarnish 🌿
This looks delicious but way too many steps for a summer dessert for me…but I hope you enjoy it…
Shortbread cookies sound like a good topping.
I watched your program, Julia.. everything looked delicious! I especially liked the turkey meatballs not to mention the fruit dessert! Very good.. very good!
You can save the seeds and pulp and use them in muffins or other baked goods.
I love the videos but that ad for Stern's and foster aggravating
Oh, my goodness, I will be right over, Julia! 💘
Take it to the next level and make it a ‘Eton Mess’ by breaking up meringues into the layers! We also sometimes add chopped marshmallow or make it with yoghurt instead of cream and top with grated chocolate! Yum
If you use the plastic blade that came with your food processor (you know, the one you never use) it will smoosh up the berries without grinding the seeds. That makes it much easier to strain them out and there won't be any fine particles slipping through the seive.
Yummy, now I have yogi d my “Claudia” glasses
To all the haters who say “just eat the berries with some cream” you appear to be missing the entire point of preparing food. There is so much more to the enjoyment of food beyond the simple consumption of the individual ingredients. Beautiful presentation alone can increase the enjoyment of a dish, add to that the enjoyment from having food prepared in new or interesting ways, and the new flavors and textures that arise when we mix different ingredients together.
No one is suggesting that this is the only or the proper way to enjoy berries and whipped cream! Rather, this is showing a way to transform an already delicious set of ingredients into a truly memorable dish.
yum!
Normally I love recipes on ATK, but there is no way I’m doing all this work when fresh berries in vanilla ice cream or on shortcake with whipped cream tastes so great!
Looks so good! Love anything strawberry!
