This is the most unappetizing opening two minutes on YouTube. Awful presentation.
Nope.. The only practical way to get them actually tender and stay in the °135 range is to sous vide them for hours, then sear.
so instead of 3 hours in a braising pan, 6 hours. so much faster.
Instant pot these after seering them. Use two cups of beef broth, one chopped onion, and season with garlic salt. Set to 45 minutes. Release pressure after 15 minutes. Remove the ribs and shred them. We love using the meat in arepas or on top of mashed potatoes with gravy.

These will definitely not be very tender lol. Collagen doesn't really start breaking down into gelatin until around 160° F, so cooking it that rare will not break down the fibers much like the guy mentioned
